Method
Heat the oven to 350°F (180°C) and line a 25 × 35 cm (10 × 14 inch) pan.
Dough. Mix the eggs (3), granulated sugar (150 g¾ cup), sour cream (200 g¾ cup + 2 tbsp), butter (100 g7 tbsp), vanilla (1 tsp) and zest. Add the all-purpose flour (400 g3⅓ cups) and baking powder (10 g2½ tsp) gradually to form a soft dough. Divide in 2, one piece slightly larger.
Roll the larger piece to fit the pan and lay it in.
Filling. Mix the tart apples (1 kg) with the granulated sugar (100 g½ cup) and cinnamon (2 tsp). Sprinkle the fine breadcrumbs (50 g7 tbsp) over the dough and spread the apples evenly on top.
Roll the second piece, lay it over the apples and brush with the beaten egg.
Bake 40 to 45 minutes, until golden. Cool, dust with powdered sugar and cinnamon, and cut into squares.
Notes
- The breadcrumbs absorb the apple juice so the bottom layer stays crisp.
